Edibles | Japanese Potato Salad

Looking for a lighter potato salad not drenched in mayonnaise? Try this Japanese Potato Salad recipe found from Lovely Lavin's website! Slight adjustments were made, but this is my go to Japanese potato recipe. It's incredibly simple to follow!

1 purple potato
1 golden potato
1 Japanese cucumber
1/2 medium sized onion
1 carrot
Kewpie mayonnaise
sea salt
black pepper
1 tbsp rice vinegar
1 tbs white sugar

peel off the potato skin and cut the potato into quarter size
bring a pot of water to boil and add the potato
let the potato cook until completely soft (test it with a fork)
take the potatoes out and drain them

thinly slice the cucumber
dice the onion
sprinkle both the cucumber and onion with sea salt
wrap the onion and cucumber in a paper towel and squeeze out the water

dice the carrot
bring another pot of water to boil and add the carrot
drain the carrot and set aside

place the cooked potato in a bowl and mash with a fork
mix the rice vinegar and sugar together in a bowl and pour over the potato
mix well
add the onions, cucumber and carrots and mix well
slowly combine in the mayonnaise dependent on personal taste (roughly 1/3 cup of mayonnaise)
add some ground pepper and mix well
chill in the refrigerator and serve when chilled
